Banana Chocolate Chip Pancakes

Ingredients

  • 1 cup all purpose flour
  •  1 cup (at least!) semisweet chocolate chips
  •  2 very ripe medium bananas
  •  2 eggs
  •  2/3 cup almond milk
  •  1 ½ tbs powdered sugar
  •  1 tsp vanilla extract
  •  1 tsp cinnamon
  •  ½ tsp baking powder
  •  ½ tsp baking soda
  •  ½ tsp salt
  •  Cooking spray

Method

  1. Turn on stove to medium heat and place a skillet on it (very important to do this before your prep so the skillet is evenly heated by the time you’re ready to get cooking!)
  2. Mix together flour, powdered sugar, cinnamon, baking powder, baking soda, and salt in a large bowl
  3. In a small bowl, smash both bananas completely, and then beat in both eggs
  4. Fold banana mix into the flour mix, and mix well
  5. Slowly add in almond milk until batter consistency is achieved
  6. Mix in vanilla extract, and then add chocolate chips
  7. Coat skillet with a thin layer of cooking spray and use a small ladle to spoon batter onto the skillet
  8. Once visible bubbles start to form, flip the pancakes over and cook for an additional 20-30 seconds
  9. Remove from heat and enjoy with maple syrup, cut fruits, or any topping of your choosing!
