
Ingredients
- 1 cup all purpose flour
- 1 cup (at least!) semisweet chocolate chips
- 2 very ripe medium bananas
- 2 eggs
- 2/3 cup almond milk
- 1 ½ tbs powdered sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- Cooking spray
Method
- Turn on stove to medium heat and place a skillet on it (very important to do this before your prep so the skillet is evenly heated by the time you’re ready to get cooking!)
- Mix together flour, powdered sugar, cinnamon, baking powder, baking soda, and salt in a large bowl
- In a small bowl, smash both bananas completely, and then beat in both eggs
- Fold banana mix into the flour mix, and mix well
- Slowly add in almond milk until batter consistency is achieved
- Mix in vanilla extract, and then add chocolate chips
- Coat skillet with a thin layer of cooking spray and use a small ladle to spoon batter onto the skillet
- Once visible bubbles start to form, flip the pancakes over and cook for an additional 20-30 seconds
- Remove from heat and enjoy with maple syrup, cut fruits, or any topping of your choosing!
