
Ingredients
- 1 head of cauliflower, cut into florets
- 3 cloves garlic, finely chopped
- 1/3 cup shredded parmesan cheese
- 2 tbs cream cheese
- 2 tbs olive oil
- 1 tsp salt
Method
- Heat olive oil in a skillet over medium heat
- Add garlic, olive oil, and 1/2 tsp salt, and saute until garlic turns crisp; remove from heat
- Boil the cauliflower florets until they are completely tender, strain, and dry
- Place the cauliflower in a food processor, with the roasted garlic, olive oil in which it was roasted, parmesan, cream cheese, and remaining salt
- Blend until smooth, and serve!
