Roasted Garlic Cauliflower Mash

Ingredients

  • 1 head of cauliflower, cut into florets
  • 3 cloves garlic, finely chopped
  • 1/3 cup shredded parmesan cheese
  • 2 tbs cream cheese
  • 2 tbs olive oil
  • 1 tsp salt

Method

  1. Heat olive oil in a skillet over medium heat
  2. Add garlic, olive oil, and 1/2 tsp salt, and saute until garlic turns crisp; remove from heat
  3. Boil the cauliflower florets until they are completely tender, strain, and dry
  4. Place the cauliflower in a food processor, with the roasted garlic, olive oil in which it was roasted, parmesan, cream cheese, and remaining salt
  5. Blend until smooth, and serve!
