For anyone who thinks broccoli is nothing but a necessary evil, this will change your mind! Savory and creamy, but totally vegan, this can add life to any meal, and is SO easy to make.
Ingredients
- 2 cups broccoli
- 1/3 cup cashews
- 1 1/2 tbs almond milk
- 1 1/3 tbs coconut oil
- 1 1/2 tbs scallions, chopped
- 2/3 tsp salt
Method
- Steam the broccoli and place it in a food processor for just a couple pulses, until shredded
- Heat 1 tbs of coconut oil in a large skillet, and add the shredded broccoli, stirring occasionally on medium heat
- In a blender, combine cashews, almond milk, 1/2 tsp coconut oil, scallions, and salt, until smooth (you might have to stop and stir a couple times)
- Add the coconut chive sauce to the broccoli in the skillet, and stir together over low heat
- Serve topped with chives
